Happy New Year...and Flu Season 2013
Thank you for visiting DaRae and Friend's Catering's (kind of ) new blog! We are so blessed to know each of you, and excited to share a little part of our catering lives with everyone. 2013 is sure to be an incredible year for us :)

While the outset of this year has been filled with exciting new prospects for our kitchen family, i.e. securing the contract to run the catering and events at the incredible Fasig Tipton(so exciting, but more on that later!), it has also been filled with sickly friends and family. Can you relate?? I'm pretty sure by now the ill are outnumbering the healthy! It has the un-infected among us running for cover at the slightest cough or sneeze from a friend, only to try and keep the inevitable germs away just a weeee bit longer. And when we can't avoid them anymore, we join the rest of the flu-ridden world on our couch, resting and drinking "plenty of fluids."
In my opinion, I can't think of a better weapon than a steamy bowl of soup to combat the flu and raise your levels of Vitamins A and C in defense. Here are some suggestions to jazz up a plain old vegetable soup into a delicious meal that'll warm your heart...and hopefully kick that immune system up a notch (or at least soothe those who have been defeated):
- Transform a plain vegetable soup to a Tuscan version by adding chopped zucchini, kidney beans, cheese tortellini, and Italian seasoning. Jazz it up even more with mini meatballs or spicy Italian sausage.
- Serve your soup over a bowl of rice to keep hunger pains from returning too soon after dinner. A hearty french or sourdough bread will do the same trick!
- Have leftover veggies in the fridge? Don't throw them away! Mushrooms, corn, Granny's green beans, roasted asparagus or even sweet potatoes....these are all great in a soup the next day! Even leftover arugula and spinach can be wilted into your soup for added spice and nutrition.
- Top your steaming bowl with a sliver of tangy cheese to add interest as well as creaminess to your soup. My favorite ~ a medallion of herbed goat cheese.
- Similarly, add a spoonful of pesto to your soup for a rich and nutty basil flavor.
- A dash of hot sauce has been known to clear the sinuses!!
- Always remember ~ your soup will be better the next day after all the ingredients have a chance to "mingle". So make enough for seconds, or freeze your soup in plastic baggies to reheat another cold and blistery night.
